From the e-mail inbox, grill packages from Dickson’s Farmstand Meats:
I thought you and your readers might be interested to learn that meat-haven Dickson’s Farmstand Meats, in Manhattan’s Chelsea Market, is teaming up with Brooklyn Larder and The General Greene to offer Brooklyn residents essential grilling packages filled with local, hormone-free meats. The three new weekend packages offer a great value and feature an assortment of house-made products, such as Chef Gabe Ross’ barbecued meats and sausages, along with the shop’s own dry-aged ground beef. Orders can be placed online by midnight Wednesday for pickup at either Brooklyn location on Friday. Further details can be found at http://dicksonsfarmstand.com/ and package descriptions are below.
Dickson’s BBQ Bonanza ($120): A variety of barbecued meats cooked slow and low on the premises in the shop’s 600 lb. capacity smoker, simply requiring a quick char on the grill to be heated. Contents can feed 12-16 people and will include items such as Boneless Short Ribs, Pulled Pork, Racks of Spare Ribs, and a Whole Tri-Tip.
Dickson’s Grilling Spectacular ($70): Includes a number of Dickson’s house-made products such as Dry-Aged Ground Beef, House-Smoked Bacon, and a selection of Chef Gabe Ross’ sausages. The sausages will rotate weekly and may include Salt & Pepper Pork, Pork with Fennel & Garlic, and Beef & Lamb with Sichaun Peppercorns, among others. Easy to prepare on any grill and enough to feed 15-18 people.
Dickson’s Burger Bash ($45 – $100; depending on the size): Bulk packages of Dickson’s 100% Dry-Aged Ground Beef from Wrighteous Organics, that are rich, meaty, and have a lower moisture content to help maintain size during cooking. Vacuum sealed in 2 lb. packages, this 80-20 blend can be purchased in 8, 10, 14, and 20 lbs. quantities.
